Crustless Mini Cheesecake

After my Mini Cheesecake Recipe was posted, I was asked if the recipe could be done without the crust. I ventured out to see if a crustless mini cheesecake was possible. Guess what, it was! I used the same recipe as before, only this time I left out the vanilla wafers and just poured the cheesecake mixture right into the cupcake liners. I present to you, CRUSTLESS MINI CHEESECAKES!
Crustless Mini Cheesecake Recipe

It baked basically the same as my recipe with a crust, except that it didn’t exactly peel off the paper perfectly- as you can see from the picture. It was still delicious, and still incredibly scrumptious… nay, divine! These cheesecakes are DIVINE!

  1. 16 oz Cream Cheese
  2. 1/2 cup Sugar
  3. 1 tsp Lemon Juice
  4. 1 tsp Vanilla Extract
  5. 2 Eggs
  1. Line your muffin tin.
  2. Mix cream cheese, sugar, lemon juice, and vanilla extract.
  3. Add eggs and blend well.
  4. Pour over wafer in each liner.
  5. Bake at 325 for 25 minutes.
  6. Chill before serving.
  1. Serve as is (plain) or top with chocolate, Nutella, or mashed fruit!

    great idea and so yummy!!! i’ve found you linking from all thing pretty and I’m so happy in having found such a good (and I think easy!)recipe! I love cheesecakes but here in italy are not so common, unfortunately… I’ll try your recipe and I’ll tell you! thanks! kiki

    So do you use 3 12-cup muffin tins, or a mini pan? I plan on making these for my birthday in June, with a ‘Choose Your Own Topping’ bar.

      You actually could use either 🙂 When I use the mini pan, I buy the mini wafers. Normal wafers fit the normal muffin tins. I’d love to see pictures of your Mini Cheesecake Bar when you do it! Sounds delicious!
