I think what I love about this easy banana bread recipe is that I can also make this Gluten-Free. How is that so? Simple. The 3 ingredients are also sold in stores in a Gluten-Free option. Three ingredients, 3 steps. This delicious recipe could not get any better in my book. My kind of baking- the kind that takes very little effort and very little money.
What you’ll need:
Bananas, over ripe (about 3-4) The first time I made this, I used 3 bananas. It wasn’t quite enough for my taste. The second time I made it, I had 5 over ripe bananas and used them all- it was too much! Somewhere between 3 and 4 is sufficient for my taste buds.
Chocolate Chips (your gluten free option) I have newly discovered this gluten-free gem. I buy mine at our local Kroger’s store (Fry’s) so maybe that helps you narrow down where to find it. It is gluten-free, dairy free and nut free. And yet somehow still tastes like chocolate. I keep these on hand at all times. Sometimes, a girl just needs a handful of chocolate to munch on.
Yellow Cake Mix (your gluten free option) There are actually different options for gluten-free cake mix. Betty Crocker just launched a new line of gluten-free box mixes of cookies, brownies and cakes. I found mine at Wal-mart.
First, mash your bananas.
Next, mix the cake mix according to the box directions. Last, add chocolate chips and bananas. Bake as directed on box.
Wham, bam, done. 3 ingredients. 3 steps. So easy, and so delicious.
