Who’s hungry? This recipe may look simple, but it is flavor packed goodness that is easy to make! A Mexican Skillet recipe that is on your table in under thirty minutes. The ingredients are simple and when it’s done, it looks like a little Mexican Haystack.
1 lb lean ground beef
14.5 oz can kidney beans, rinsed and drained
12 oz can diced tomatoes and green chilies, undrained
1 package taco seasoning
¾ cup water
¾ cup frozen corn, thawed
2 cups cooked rice
To Top: sour cream & finely chopped cilantro
In a large skillet cook beef until browned.
Drain and return to skillet. Stir in beans,
tomatoes, taco seasoning, corn and
¾ cup water; bring to boil. Reduce heat, cover
and simmer 10-12 minutes or until thickened,
stirring occasionally. Serve over rice.
Top with sour cream and cilantro.
