Mini Cheesecake Recipe

This recipe is by far the easiest and most delicious cheesecake recipe I’ve ever done. It is a recipe given to me when I went away to college (ding back 2003) by my mom’s best friend who is amazing in the kitchen. You can make this mini cheesecake recipe with either regular size muffin tins or the mini size. The crust is simple, vanilla wafer cookies! Which come in boxes of mini or regular that fit perfectly in the bottom of muffin tins. Top these yummy cheesecakes just like you would with any cheesecake- with chocolate or mashed fruit. I also tried a mini dollop of nutella, it was divine!

Ingredients you’ll need:
Vanilla Wafer Cookies
16 oz Cream Cheese
1/2 cup Sugar
1 tsp Lemon Juice
1 tsp Vanilla Extract
2 Eggs

Directions:
Line your muffin tin. Place a vanilla wafer at the bottom of each liner. Mix cream cheese, sugar, lemon juice, and vanilla extract. Add eggs and blend well. Pour into each liner. Bake at 325 for 25 minutes. Chill before serving.

Ingredients

      I tried the cheesecakes with no crust yesterday- still yummy! I tried them as both mini muffin size and regular muffin size and the only thing is that the regular muffin size comes out with a sunken middle- which was fine by me because I filled it with fruit! I’ll be posting about it Thursday this week including pictures. Thanks for the idea!
